Crockpot Chicken and Stuffing

I'm not a huge cook, but I am pretty good with crockpots. Since it's almost Thanksgiving, I thought I'd share a crockpot chicken and stuffing recipe with you.

Disclaimer: This recipe is not as good as your homemade turkey and stuffing on Thanksgiving (but it's still really gooood). This is better for a Friendsgiving when you're on a budget and want to make something easy and TASTY.

Recipe type: Main Dish
Serves: 2-3
Ingredients: 

  • 2 large chicken breasts (I used frozen)
  • 1 can cream of chicken soup
  • 1/2 cup plain greek yogurt
  • 1 box stuffing mix
  • Nonstick cooking spray
  • Crockpot
Instructions:

1. Spray the crockpot with nonstick cooking spray
2. Place the chicken breasts at the bottom of your crockpot


3. Pour the dry stuffing mix on top of the chicken

4. Mix together the greek yogurt and cream of chicken soup in a separate bowl, then layer it on top of the stuffing.


5. Add anywhere from 1/2 - 1 cup of water to the mixture, depending on how moist (shudder) you like your stuffing. 

6. Cook on high for about 4 hours or low for 7-8.

And that's it! So easy and delicious.

Tip: Fluff the stuffing about half way through to mix the ingredients together. And feel free to add any green beans, onion, celery, etc. if you want to get creative and add a little crunch! (Also this isn't the best picture of it - it tastes better than it looks! ha)
